Keto Fit Whip Zucchini Bread

This recipe was created for those following a low-carb or keto lifestyle who are craving a baked good! Keto Fit Whip Zucchini Bread is moist, spicy and cakey which you can enjoy for only 3.2g net carbs per serving! Grab those fresh zucchinis, your grater and Fit Whip (any flavor!) to make this tasty, indulgent treat!

Keto Fit Whip Zucchini Bread

  • Prep Time = 5-10 mins
  • Cook Time = 20-22 mins (depending on size of loaf pan)
  • Makes 1 mini cake loaf, with two servings

INGREDIENTS

Dry Ingredients:
  • 2 scoops Fit Whip - May use Chocolate (38g) or Vanilla Sugar Cookie* (34g) Flavor
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • Dash of salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
Wet Ingredients:
  • 1 Large Egg
  • 1 Tbsp Butter, softened to room temp 
  • 1 Tbsp Heavy Whipping Cream 
  • 1 Tbsp Water
  • 2/3 Cup (85g) Freshly grated zucchini (about 1 small zucchini) 

OPTIONAL TOPPING

  • Nuts of your choice - place on top before baking 
  • Sugar-free chocolate chips - place on top before baking 
  • Low-Carb Icing:
    • 2 Tbsp Whipped Cream Cheese
    • 1 Packet Sugar-Free Sugar substitute (such as Truvia, Stevia or Whole Earth)
    • 1/8 tsp Vanilla Extract  

INSTRUCTIONS

  • Preheat oven to 350'F. Spray a small loaf pan (5-6 in x 3 in) with nonstick spray 
  • In a small-to-medium bowl, mix dry ingredients together.
  • In a small bowl whisk together wet ingredients except for the zucchini.  
  • Add wet ingredients into dry ingredients and with a small whisk or fork, mix until ingredients are just combined. Fold in zucchini. 
  • Pour batter into loaf pan. 
  • Add nuts and/or sugar-free chocolate chips to your liking.
  • Cook for 20-22 minutes, or until cake rises and a toothpick comes out clean from the center of the cake.  
  • (Optional) When cool, top with low-carb icing/spread of your choice. 
  • Enjoy!
